Start by finely chopping the onion.

In a pan, heat some low-calorie cooking spray and add the chopped onion. Cook until the onion turns golden brown and becomes fragrant. Set aside.

In a mixing bowl, combine the grated reduced-fat mature Cheddar cheese, a dash of Worcestershire sauce, a pinch of mustard powder, the egg yolk, and a splash of skim milk. Mix well until all ingredients are evenly incorporated.

Add the cooked onion to the cheese mixture and season with salt and pepper. Stir until the onion is well distributed throughout the mixture.
Take a slice of wholemeal bread and spread a generous layer of the cheese and onion mixture on top. Place the bread under the grill for 3-4 minutes or until the cheese is melted and browned.
Remove the Viking Toast from the grill and serve it immediately while it's warm and gooey. Pair it with a hot cup of coffee or tea for a truly satisfying meal.
