- 1/4 cup sushi rice vinegar
- 2 tablespoons sugar
- 1 tablespoon sake or mirin wine
Mix sushi rice vinegar, sugar, and sake/mirin until sugar is dissolved.
Pour the seasoning over hot rice and fold gently using a flat spatula.
Let the rice stand for about 10 minutes to develop the flavor fully.
Take a small amount of sushi rice and form it into an oval-shaped mound, about 1.5 inches long and 1 inch wide.
Choose high-quality, fresh fish or seafood like salmon, tuna, eel, or shrimp.
Place the fish or seafood on top of the rice, slightly extending over the edges.
Press gently to adhere the topping to the rice.
