Salmon en croute is a timeless culinary masterpiece that brings together the perfect balance of flavors and textures. This classic dish, consisting of succulent salmon enveloped in flaky puff pastry and accompanied by luscious creamed spinach, is a showstopper that never fails to impress.

Ingredients
  

  • 1 Salmon fillet
  • 200 g Fresh spinach
  • 2 tablespoons Butter
  • 2 cloves Garlic minced
  • 50 ml Cream
  • 1 sheet Puff pastry
  • Salt To taste
  • Pepper To taste
  • 1 Egg beaten for egg wash

Instructions
 

  • Create a creamy spinach filling for your salmon en croute. Sauté fresh spinach leaves with garlic and butter until wilted. Add a splash of cream and season with salt and pepper. Set aside to cool.
  • Season the salmon fillet with salt and pepper. Place the cooled creamed spinach on top of the salmon, evenly spreading it out.
  • Roll out the puff pastry on a lightly floured surface. Place the salmon and spinach filling in the center of the pastry. Carefully fold the pastry over the salmon, ensuring it is completely sealed. Trim off any excess pastry.
  • Using a sharp knife, make a few small slits on the top of the pastry to allow steam to escape while baking. This will help ensure a crisp and golden crust.
  • Transfer the wrapped salmon to a baking sheet lined with parchment paper. Brush the pastry with an egg wash for a beautiful, glossy finish. Bake in a preheated oven at 200°C for 25-30 minutes, or until the pastry is golden brown.
  • Once baked, remove the salmon en croute from the oven and let it rest for a few minutes before slicing. Serve with your favourite side dishes or a fresh salad. Enjoy!
