Place flour on a clean surface or in a large mixing bowl. Create a well in the center. Add beaten eggs, olive oil, and salt. Mix until dough forms.
Transfer dough onto a floured surface, knead for 5-7 minutes until smooth. Cover and let rest for 30 minutes.
Divide dough into portions. Roll out each portion into thin, even sheets. Use a pasta machine if available.
Mix ricotta, mascarpone, Parmesan, basil, salt, and pepper for filling
Place filling on one pasta sheet, brush water around filling. Top with another sheet, press to seal edges. Cut into ravioli shapes
Boil salted water, cook ravioli for 3-4 minutes until they float. Remove with slotted spoon.
Serve ravioli with preferred sauce, garnish with Parmesan and basil. Enjoy!
