- Fresh lemon slices

- Freshly ground black pepper

- White wine or crème fraîche
Preheat your oven to 200°C (400°F, Gas Mark 6).
Rinse the lemon sole fillets under cool, running water and pat them dry with a clean paper towel.
Fresh lemon slices
Arrange the fillets in a lightly greased baking dish or on a parchment-lined baking sheet.
Season the fish generously with salt and freshly ground black pepper.

Scatter a few thin lemon slices over the top of the fillets and dot with small pieces of butter.
Bake for 12-15 minutes, or until the fish flakes easily with a fork. Be careful not to overcook.
Remove from the oven and let it rest for a couple of minutes before serving.
