  • 1/2 cup flour
  • 1 onion chopped
  • 3 cloves of garlic minced
  • 1- inch piece of ginger grated

  • 2 cups chicken stock
  • 1 cup rice

Instructions

  • Bread the chicken breasts by dipping them in flour, then beaten eggs, and finally in breadcrumbs. Press the breadcrumbs firmly onto the chicken to ensure a crisp coating.
  • Heat vegetable oil in a frying pan and cook the breaded chicken until golden and cooked through. Remove from heat and set aside.
  • In the same pan, sauté onions, garlic, and ginger until fragrant. Add curry powder and cook for a minute to release the flavors.
  • Pour in chicken stock and bring to a simmer. Cook for 10-15 minutes until the sauce thickens.
  • Once the sauce has thickened, use a blender or a hand blender to blend until smooth.
  • Serve the chicken katsu with rice and pour the curry sauce over the top. Enjoy!
