- 2 chicken breasts
- 1 cup breadcrumbs
- 2 eggs
- 1/2 cup flour
- 1 onion chopped
- 3 cloves of garlic minced
- 1- inch piece of ginger grated
- 2 tablespoons curry powder
- 2 cups chicken stock
- 1 cup rice
- Salt to taste
- Vegetable oil for frying
Bread the chicken breasts by dipping them in flour, then beaten eggs, and finally in breadcrumbs. Press the breadcrumbs firmly onto the chicken to ensure a crisp coating.
Heat vegetable oil in a frying pan and cook the breaded chicken until golden and cooked through. Remove from heat and set aside.
In the same pan, sauté onions, garlic, and ginger until fragrant. Add curry powder and cook for a minute to release the flavors.
Pour in chicken stock and bring to a simmer. Cook for 10-15 minutes until the sauce thickens.
Once the sauce has thickened, use a blender or a hand blender to blend until smooth.
Serve the chicken katsu with rice and pour the curry sauce over the top. Enjoy!
