Ingredients
  

  • 150 g self-raising flour
  • 100 g brown sugar
  • 1/2 tsp baking soda
  • 1 tsp ground ginger
  • 100 g butter
  • 2 tbsp golden syrup
  • 50 g crystallized ginger finely chopped
  • 50 g white sugar for coating

Instructions
 

  • In a mixing bowl, combine the self-raising flour, brown sugar, baking soda, and ground ginger.

  • Using your fingertips, rub in the butter until the mixture resembles breadcrumbs.

  • Add the finely chopped crystallized ginger and golden syrup to the bowl.

  • Mix everything together until it forms a dough.
  • Preheat your oven to 180°C (350°F).
  • Roll the dough into small walnut-sized balls.
  • Coat the balls in white sugar.

  • Place the coated balls on a baking tray lined with parchment paper.
  • Bake the biscuits in the preheated oven for about 12 minutes or until they turn golden brown.
  • Remove the biscuits from the oven and allow them to cool completely.
