- Ready-rolled shortcrust pastry
- 320 g Plain flour to dust
- 50 gButter
- 125 g Golden syrup
- 25 g Light brown soft sugar
- 100 g Cornflakes
- 125 g Strawberry or raspberry jam
- Custard
Heat the oven to 180C/160C fan/gas 4. Roll out the pastry and line a tart tin.
Bake the pastry blind for 15 minutes, then remove the baking beans and bake for another 5-10 minutes until golden.
In a small pan, melt the butter, golden syrup, and sugar until smooth. Fold in the cornflakes.
Spread the jam onto the cooked pastry base, then top with the cornflake mixture.
Bake for another 5 minutes until the cornflakes are golden and toasted.
Allow the tart to cool before serving with custard.
