- 1/2 cup mayonnaise or Greek yoghurt for a healthier option
- 1 tablespoon Dijon mustard
- 1/2 cup celery finely chopped
- 1/4 cup red onion diced
- 1/2 cup grapes halved (optional for a sweet touch)
- 1/4 cup toasted almonds or walnuts
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh herbs like parsley or dill for garnish
If you haven’t cooked your chicken yet, start by poaching or roasting chicken breasts until fully cooked. Once cooled, shred the chicken into bite-sized pieces using a fork or your hands.
In a large bowl, combine mayonnaise (or Greek yoghurt), Dijon mustard, lemon juice, salt, and pepper. Whisk until smooth and well-blended.
Add the shredded chicken, celery, red onion, grapes, and nuts to the bowl with the dressing. Toss gently to coat all ingredients evenly with the dressing.
Taste your salad and adjust the seasoning if necessary. Add more salt, pepper, or lemon juice according to your preference.
For best results, chill the chicken salad in the fridge for at least 30 minutes before serving to allow the flavours to meld together. Serve chilled, garnished with fresh herbs.
