Heat up some oil in a saucepan over medium heat. Add onions and cook for a minute until translucent. Add chicken and cook until lightly browned.

Melting the butter in a pan.

Once the butter is melted, add the flour to make a roux. Stir continuously until the mixture turns golden-brown.

Slowly whisk in the chicken stock and milk. Keep whisking until the sauce is smooth and thick.

Finally, add a pinch of your favorite herbs, such as thyme or rosemary. Give the sauce a final stir before pouring it over the chicken and vegetables.

Lining a deep pie dish with shortcrust pastry. Make sure to press the pastry into all the corners, leaving no gaps. Trim the edges and set aside any excess pastry.

Spoon the chicken and vegetable mixture into the pastry-lined dish, spreading it evenly. Use a fork to press down lightly and compact the filling.
Slowly pour the creamy sauce over the chicken filling, ensuring that it covers everything evenly. Be careful not to overflow the dish.
Roll out the remaining pastry and place it over the top of the pie. Trim the edges and use a fork to press down, ensuring that the pastry is secure.
With the chicken filling and pastry ready, it's time to bring them together in the oven.
To start, preheat the oven to 200°C. While the oven heats up, brush the top of the pie with beaten egg yolk for a golden brown crust. Then, place the pie dish in the middle of the oven.
Bake for 30-35 minutes until the pastry turns golden brown and the filling starts to bubble. Keep an eye on the pie and cover the edges with foil if they start to brown too quickly.
Once the pie is done, take it out of the oven and let it sit for a few minutes to cool. Cut into generous slices and serve with your favorite sides.
