- 1 pound asparagus trimmed and cut into 1-inch pieces
- 1 cup fresh spinach leaves
- 2 shallots chopped
- 2 tablespoons butter
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
In a large pot, melt the butter over medium heat. Add the shallots and cook until softened.
Add the asparagus and spinach to the pot. Cook for a few minutes until they begin to wilt.
Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 15 minutes until the asparagus is tender.
Using an immersion blender, puree the soup until smooth.
Stir in the heavy cream and season with salt and pepper to taste.
Simmer for another 5 minutes until heated through.
Serve hot and garnish with a sprinkle of fresh herbs, if desired.
