  • 2 medium Carrots diced
  • 1 large Onion chopped
  • 2-3 cloves Garlic minced
  • 2 tablespoons Tomato purée
  • 1 cup Red wine choose a variety you enjoy drinking
  • 2 cups Chicken or vegetable stock
  • 1 can Chopped tomatoes 14.5 oz or about 2 cups fresh
  • 2 Bay leaves
  • 1 teaspoon Fresh rosemary dried
  • 1 teaspoon Fresh thyme dried
  • 2-3 medium Potatoes peeled and diced
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • Crusty bread for serving

  • Begin by browning the sausages in a casserole dish with a drizzle of olive oil. This will help seal in the flavors and give the sausages a nice color.
  • Next, add the bacon, carrots, onion, and garlic to the dish. Cook them until they start to brown and soften, releasing their aromatic flavors.
  • Stir in the tomato purée and fry it for a couple of minutes, allowing it to develop a rich taste. Then, add the red wine to simmer, infusing the casserole with a deep and savory undertone.
  • Pour in the stock, chopped tomatoes, and a selection of herbs such as bay leaves, rosemary, and thyme. These herbs will impart a fragrant aroma and harmonize the flavors in the casserole.
  • Add the potatoes, Worcestershire sauce, and the browned sausages to the dish. Let the casserole simmer slowly for about 1 hour 30 minutes with the lid on. This extended cooking time allows all the flavors to meld together, resulting in a rich and comforting dish.
