- 1 lb Dry split peas
- 2 cups Onions diced
- 1 ½ tablespoons Onion powder
- 1 tablespoon Butter
- 2 tablespoons Olive oil
- 1 tablespoon Garlic minced
- 2 Bay leaves
- 2 Thyme sprigs
- 8 cups Water
- 2 cups Carrots diced
- 2 Russet potatoes peeled and diced
In a large pot, combine the dry split peas, diced onions, onion powder, butter, olive oil, minced garlic, bay leaves, thyme sprigs, and water.
Bring the pot to a boil, then reduce the heat and simmer for about 2.5 hours or until the desired thickness is achieved.
Add the diced carrots and potatoes to the pot and continue cooking for another 40 minutes, or until the vegetables are tender.
Remove the bay leaves and thyme stems from the soup.
If you want to add a meaty flavor, take a ham bone, shred the ham from it, and add it back to the soup. For a vegetarian option, omit the ham bone and add extra herbs and spices for flavor.
Season the soup with salt and pepper to taste.
