  • 1 lb Dry split peas
  • 2 cups Onions diced
  • 1 ½ tablespoons Onion powder
  • 1 tablespoon Butter
  • 2 tablespoons Olive oil
  • 1 tablespoon Garlic minced
  • 2 Bay leaves
  • 2 Thyme sprigs
  • 8 cups Water
  • 2 cups Carrots diced
  • 2 Russet potatoes peeled and diced

Instructions

  • In a large pot, combine the dry split peas, diced onions, onion powder, butter, olive oil, minced garlic, bay leaves, thyme sprigs, and water.
  • Bring the pot to a boil, then reduce the heat and simmer for about 2.5 hours or until the desired thickness is achieved.
  • Add the diced carrots and potatoes to the pot and continue cooking for another 40 minutes, or until the vegetables are tender.
  • Remove the bay leaves and thyme stems from the soup.
  • If you want to add a meaty flavor, take a ham bone, shred the ham from it, and add it back to the soup. For a vegetarian option, omit the ham bone and add extra herbs and spices for flavor.
  • Season the soup with salt and pepper to taste.
  • Serve the homemade pea soup hot and enjoy the comforting and flavorful meal!
