Ingredients
  

  • 200 grams of digestive biscuits
  • 2 tablespoons of golden caster sugar
  • 80 grams of unsalted butter melted
  • A pinch of sea salt
  • 900 grams of full-fat Philadelphia cream cheese
  • 200 grams of golden caster sugar
  • 200 ml of soured cream
  • 3 free-range eggs
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of sifted plain flour

Instructions
 

  • Crush the biscuits to fine crumbs.
  • In a mixing bowl, combine the crushed biscuits with sugar, salt, and melted butter.
  • Mix well until the texture resembles wet sand.
  • Press this mixture evenly into a greased cake tin and refrigerate to set while you prepare the filling.
  • Blend the cream cheese with caster sugar and a portion of soured cream until smooth.
  • Add the eggs one at a time, ensuring each is fully incorporated before adding the next.
  • Mix in the vanilla extract and gently fold in the flour.
  • Preheat your oven to 180°C (350°F).
  • Pour the prepared filling over the chilled base in the cake tin.
  • Bake the cheesecake until the top is golden and the center is slightly wobbly - about 45 to 55 minutes.
  • Let the cheesecake cool completely in the tin before transferring it to the refrigerator to set overnight.
