Preheat the oven to 400°F (200°C).
Rinse the monkfish fillets and pat them dry with paper towels.

In a small bowl, mix together the olive oil, minced garlic, paprika, thyme, salt, and pepper.

Place the monkfish fillets in a baking dish and brush them with the olive oil mixture, making sure to coat them evenly.
Arrange the lemon slices on top of the fish.

Bake the monkfish in the preheated oven for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
Once done, remove the baking dish from the oven and sprinkle the chopped parsley on top.
