Preheat the oven to 180°C and line a baking tray with parchment paper.
In a mixing bowl, cream together the softened butter, light brown soft sugar, and caster sugar until well combined.
125 gram Butter, 125 gram Caster sugar, 100 gram Light brown soft sugar
Mix in the lightly beaten egg and vanilla extract until smooth.
1 tsp Vanilla extract, 1 Egg
Sift in the self-raising flour and salt, then add the chocolate chips.
225 gram Self-raising flour, 200 gram Chocolate chips, 1/4 tsp Salt
Stir everything together until the dough is well mixed and the chocolate chips are evenly distributed.
Roll the dough into walnut-sized balls or shape it into a sausage and slice it for neater cookies.
Place the cookies on the prepared baking tray, spacing them apart to allow for spreading during baking.
Bake the cookies in the preheated oven for 7-10 minutes, or until they are just set and have a slightly golden color.
Remove the tray from the oven and let the cookies cool for a minute on the tray.
Transfer the cookies to a wire cooling rack to cool completely before enjoying.
