Ingredients
  

  • Ripe mangoes
  • Red onion
  • Grated fresh ginger
  • Garlic
  • Maple syrup or honey
  • Red wine vinegar
  • Coriander
  • Smoked paprika
  • Cardamom
  • Cinnamon
  • Chili powder

Instructions
 

  • Start by peeling and dicing the mangoes.

  • Proceed to peel and dice the red onion and garlic as well.

  • In a saucepan, heat olive oil and sauté the shallots and garlic until they become translucent.
  • Add the diced mangoes, brown sugar, apple cider vinegar, ground ginger, cumin, salt, and red pepper flakes (if desired) to the saucepan.

  • Cook the mixture over medium-high heat until the mangoes start to brown and the liquid reduces, resulting in a thick sauce.
  • Using a spoon or a potato masher, mash the chutney to achieve your desired consistency.

Notes

The mango chutney can be served warm, at room temperature, or chilled, depending on your preference and the occasion.
