- 1 lb macaroni
- 4 cups sharp white cheddar cheese shredded
- 2 cups gruyere cheese shredded
- 1 cup cream cheese softened
- 4 cups whole milk
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- Salt and pepper to taste
Preheat the oven to 375°F (190°C).
Cook the macaroni according to package instructions. Drain and set aside.
In a large saucepan, melt the butter over medium heat. Add the flour and whisk until smooth.
Gradually whisk in the milk, a little at a time, until the sauce is smooth and thickened.
Remove the saucepan from the heat and stir in the shredded cheddar, gruyere, and cream cheese until melted and smooth.
Season with salt and pepper to taste.
Add the cooked macaroni to the sauce and stir until well coated.
Transfer the mac and cheese to a baking dish and bake for 25-30 minutes, or until bubbly and golden on top.
Remove from the oven and let it cool for a few minutes before serving.
