Ingredients

  • 2 cups rolled oats
  • 1 cup mixed nuts and seeds such as almonds, walnuts, sunflower seeds, and pumpkin seeds
  • 1 teaspoon ground cinnamon
  • 1/4 cup unrefined oil such as coconut oil or olive oil
  • 1/4 cup natural sweetener such as maple syrup or honey
  • 1/2 cup dried fruit such as raisins, cranberries, or chopped dates

Instructions

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the rolled oats, mixed nuts and seeds, and ground cinnamon. Mix well.
  • In a separate bowl, mix together the unrefined oil and the natural sweetener until well combined.
  • Pour the wet ingredients over the dry ingredients in the large bowl. Mix thoroughly, making sure all the dry ingredients are coated evenly.
  • Spread the mixture onto the prepared baking sheet, using a spatula or your hands to press it down firmly.
  • Bake in the preheated oven for 25-30 minutes, or until the granola is lightly golden and crispy, stirring once halfway through.
  • Remove from the oven and allow the granola to cool completely on the baking sheet. This will help it become crunchy.
  • Once cooled, add the dried fruit and any other desired mix-ins, such as shredded coconut or chocolate chips.
