Ingredients
  

  • Molasses
  • Brown sugar
  • Butter
  • All-purpose flour
  • Ginger
  • Cinnamon
  • Cloves
  • Hot water

Instructions
 

  • In a mixing bowl, cream together 150g of softened unsalted butter and 200g of light brown soft sugar until light and fluffy.
  • Beat in 225g of unsulphured molasses, 1 large egg, and 1 teaspoon of vanilla extract until well combined.
  • In a separate bowl, whisk together 600g of all-purpose flour, 1 tablespoon of ground ginger, 1 tablespoon of ground cinnamon, 1/2 teaspoon of ground cloves, and 1/2 teaspoon of baking soda.
  • Gradually mix the dry ingredients into the wet mixture until a thick dough forms.
  • Stir in 240ml of hot water to loosen the batter and ensure a smooth consistency.
  • Preheat the oven to 180°C (350°F). Pour the batter into a greased and lined baking pan. Bake for 40-45 minutes or until the gingerbread is firm to the touch and a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the gingerbread cool slightly before slicing and serving. Enjoy it warm with a dollop of freshly whipped cream or tangy lemon curd.
