Preheat your oven to 180°C (160°C fan).
In a large bowl, mix the flour, ginger, and cinnamon.

In a saucepan, melt the butter, sugar, and golden syrup until smooth.
125 g unsalted butter, 175 g light brown soft sugar, 4 tbsp golden syrup
Pour the wet mixture into the dry ingredients and stir to form a dough.
Roll out the dough and cut out the shapes using the provided template.
Bake the gingerbread pieces for 12-15 minutes until firm.
Let the pieces cool before assembling with gingerbread icing as glue.
Decorate with candy, icing, and other festive treats.
