In a large bowl, mix together 200 grams of plain flour, 2 teaspoons of baking powder, 2 tablespoons of caster sugar, and a pinch of salt.
In a separate bowl, whisk together 2 large eggs, 300 milliliters of milk, and 50 grams of melted unsalted butter.
Gradually pour the wet mixture into the dry ingredients, whisking until just combined. Be careful not to overmix the batter.
Heat a non-stick pan or griddle over medium-high heat.
Scoop 1/4 cup of batter onto the pan for each pancake.
Cook for 2-3 minutes on each side, or until golden brown.
Repeat until all the batter is used.
