Ingredients
  

  • 150 g Self-raising flour
  • 150 g Caster sugar
  • 150 g Butter
  • 3 medium Eggs
  • 1 tsp Vanilla extract
  • 2 tbsp Milk

Instructions
 

  • Preheat your oven to 180°C/350°F/Gas Mark 4 and line a cupcake tin with paper cases.
  • In a mixing bowl, cream together 100g (3.5oz) of softened butter and 100g (3.5oz) of caster sugar until light and fluffy.
  • Add 2 large eggs and 1 tsp of vanilla extract and beat until well combined.
  • Sift in 100g (3.5oz) of self-raising flour and gently mix until the batter is smooth.
  • Gradually mix in 2 tbsp of milk until the batter is at a dropping consistency.
  • Using a spoon or ice cream scoop, fill each paper case with the batter until 2/3 full.
  • Bake the fairy cakes for 12-15 minutes or until golden brown and a skewer inserted into the center comes out clean.
  • Remove from the oven and allow to cool on a wire rack.
