Making homemade donuts is a delightful and rewarding experience that allows you to indulge in sweet treats right in the comfort of your own kitchen.

- 500 g strong white bread flour
- 60 g golden caster sugar
- 15 g fresh yeast crumbled
- 4 eggs
- zest of half a lemon
- 2 tsp fine sea salt
- 125 g softened unsalted butter
- about 2 liters of sunflower oil for deep-frying
- caster sugar for tossing
Mix the water, dough ingredients (except for the butter), and mix until the dough forms a ball.
Add the butter gradually and mix until the dough is glossy and elastic.
Let the dough rest and rise overnight in the fridge.
Shape the dough into 50g pieces and let them rise until doubled in size.
Fry the doughnuts until golden brown.
Toss the doughnuts in caster sugar for a sweet finish.
