Start by preheating the oven to 200°C (180°C fan).
Line a baking tray with a silicone mat to prevent sticking.
Peel the potatoes and cut them into chips or fries of your desired thickness.

Rinse the potato chips under cold water to remove any excess starch.
Shake off any excess moisture from the potatoes.
Place the potato chips in a microwave-safe container or food bag. Microwave them on high for 5 minutes to partially cook them.
In the same container or food bag, mix the partially cooked potatoes with oil, smoked paprika, sea salt, and black pepper. Ensure the potatoes are evenly coated with the seasonings.

Spread the seasoned potatoes on the prepared baking tray in a single layer. Bake them in the preheated oven for 15-20 minutes or until they are crispy and golden brown.
Transfer the crispy fries to a baking dish. Sprinkle them with cheese, ham, mayonnaise, and spring onions.
4 tablespoons Lighter mayonnaise, 100 g Cheese grated, 2 Spring onions, 4 slices Cooked ham
Place the baking dish back in the oven and bake for an additional 5 minutes or until the cheese is melted and bubbly.
Remove the dirty fries from the oven and serve them hot. Enjoy their deliciousness as a snack, side dish, or party appetizer!
