Ingredients
  

  • 2 tablespoons Butter
  • 1 tablespoon Extra-virgin olive oil
  • 1 Onion diced
  • 2 Yukon Gold potatoes diced
  • 1, Carrot diced
  • 2 cups Cooked corned beef shredded
  • 2 tablespoons Fresh parsley chopped
  • 1/2 teaspoon Ground black pepper
  • 1/2 teaspoon Dried thyme leaves
  • Salt To taste

Instructions
 

  • Start by cooking the onion until it's lightly browned. This will add a sweet and caramelized flavor to the hash.
  • Next, stir in the veggies of your choice. Carrots and bell peppers work well, but feel free to get creative with other vegetables you have on hand. Cook the veggies until they are tender.
  • Add the cooked corned beef to the slow cooker. You can either shred it or chop it into small pieces, depending on your preference.
  • Season the ingredients with fresh parsley, ground black pepper, dried thyme leaves, and salt to taste. These spices will complement the flavors of the corned beef and vegetables.
