Ingredients
  

  • 225 g Flour
  • 225 g Sugar
  • 225 g Butter softened
  • 4 large Eggs
  • 1 tablespoon Coffee granules
  • 2 tablespoons Milk
  • 1 teaspoon Baking powder
  • 1 teaspoon Vanilla extract

Instructions
 

  • Preheat the oven to 180°C (160°C fan)/Gas 4.
  • Cream the butter and sugar together in a large mixing bowl until fluffy and pale.
    225 g Butter, 225 g Sugar
  • Add the eggs one at a time, whisking well between each addition.

  • Add in the coffee granules and mix well.
    1 tablespoon Coffee granules
  • Combine the flour, baking powder, and salt in a separate bowl.
    225 g Flour, 1 teaspoon Baking powder
  • Add the flour mixture to the egg mixture gradually, mixing well to combine.
  • Pour in the milk and vanilla extract, and mix well to create a smooth batter.
    1 teaspoon Vanilla extract, 2 tablespoons Milk
  • Pour half of the coffee cake batter into a greased and lined 8-inch cake tin.
  • Sprinkle some coffee granules over the batter to enhance the coffee flavor.
  • Add the remaining batter on top of the coffee granules.
  • Bake the cake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Once baked, allow the cake to cool in the tin for 15 minutes before transferring it to a wire rack to cool completely.
