Preheat the oven to 180°C (160°C fan)/Gas 4.
Cream the butter and sugar together in a large mixing bowl until fluffy and pale.

Add the eggs one at a time, whisking well between each addition.

Add in the coffee granules and mix well.

Combine the flour, baking powder, and salt in a separate bowl.

Add the flour mixture to the egg mixture gradually, mixing well to combine.
Pour in the milk and vanilla extract, and mix well to create a smooth batter.

Pour half of the coffee cake batter into a greased and lined 8-inch cake tin.
Sprinkle some coffee granules over the batter to enhance the coffee flavor.
Add the remaining batter on top of the coffee granules.
Bake the cake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Once baked, allow the cake to cool in the tin for 15 minutes before transferring it to a wire rack to cool completely.
