  • 3 Egg whites
  • 1/4 cup Sugar
  • 1 cup Heavy cream
  • 3 Egg yolks
  • 225 g Melted chocolate

  • Start by whipping the egg whites and sugar until they form soft peaks.

  • In a separate bowl, whip the cream until stiff peaks form.

  • Use a large rubber spatula to gently cut through the center of the mixture and bring some up from the bottom, flipping it over to incorporate air.
