Finely chop a bunch of fresh parsley.
1 bunch Fresh Parsley finely chopped
Mince 4 cloves of garlic.
4 cloves Garlic minced
Finely chop 1-2 red chilies, depending on your spice preference.
1-2 Red Chilies finely chopped
Combine the chopped parsley, minced garlic, chopped red chilies, 1 tablespoon of dried oregano, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1/4 cup of olive oil, and 2 tablespoons of red wine vinegar in a bowl.
1 tablespoon Dried Oregano, 1 tablespoon Salt, 1/2 teaspoon Black Pepper, 1/4 cup Olive Oil, 2 tablespoons Red Wine Vinegar
Stir well to combine all the ingredients.
Let the chimichurri sit for at least 2 hours, or overnight, to allow the flavors to meld together.
Once the chimichurri has rested, stir it again before serving.
