Ingredients
  

  • 2 cans of chickpeas drained and rinsed
  • 1/2 cup chopped fresh parsley
  • 2 cloves of garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 tablespoons tahini
  • 2 tablespoons lemon zest
  • Salt and black pepper to taste
  • 1/2 cup breadcrumbs
  • Olive oil for frying

Instructions
 

  • In a food processor, combine the chickpeas, parsley, garlic, cumin, coriander, tahini, lemon zest, salt, and black pepper. Pulse until well mixed but still slightly chunky.
    2 cans of chickpeas, 1/2 cup chopped fresh parsley, 2 cloves of garlic, 1 teaspoon ground cumin, 1 teaspoon ground coriander, 2 tablespoons tahini, 2 tablespoons lemon zest, Salt and black pepper to taste
  • Transfer the mixture to a bowl and stir in the breadcrumbs. Let the mixture rest for 10 minutes to allow the breadcrumbs to absorb moisture.

  • Shape the mixture into patties and place them on a baking tray. Refrigerate for at least 30 minutes to firm up.
  • In a large frying pan, heat olive oil over medium heat. Fry the patties for 4-5 minutes on each side until golden brown and crispy.

  • Remove the patties from the pan and drain on a paper towel to remove excess oil.
  • Serve the Mediterranean chickpea burgers on burger buns with your favorite toppings such as lettuce, tomato, red onion, and a dollop of tahini sauce.
