In a large pot, heat the olive oil and add the chopped onion, carrot, and celery. Cook for 5 minutes on medium heat, until softened.

Add the garlic and cook for another minute, stirring constantly.

Add the sliced chicken breasts and cook for 5 minutes, until browned on all sides.
2 large Chicken Breast
Pour in the chicken broth and scrape the bottom of the pot to release any browned bits.
Add the bay leaves, dried thyme, and black pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.

Add the chopped potatoes and simmer for another 15 minutes, or until the potatoes are tender.
Add the chopped kale and cook for 5 minutes, until wilted.
Remove the bay leaves and serve your delicious homemade chicken soup hot, garnished with chopped fresh parsley.
