Ingredients
  

  • 2 large Chicken Breast
  • 2 cups Carrots chopped
  • 2 cups Celery chopped
  • 1 medium Onion chopped
  • 4 cloves Garlic minced
  • 2 Bay Leaves
  • 1 tsp Thyme dried
  • 6 cups Chicken Stock
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tbsp Olive Oil
  • 2 tbsp Parsley chopped

Instructions
 

  • In a large pot, heat the olive oil and add the chopped onion, carrot, and celery. Cook for 5 minutes on medium heat, until softened.
    2 cups Carrots, 2 cups Celery, 1 medium Onion, 2 tbsp Olive Oil
  • Add the garlic and cook for another minute, stirring constantly.
    4 cloves Garlic
  • Add the sliced chicken breasts and cook for 5 minutes, until browned on all sides.
    2 large Chicken Breast
  • Pour in the chicken broth and scrape the bottom of the pot to release any browned bits.
  • Add the bay leaves, dried thyme, and black pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
    2 Bay Leaves, 1 tsp Thyme, 1 tsp Pepper
  • Add the chopped potatoes and simmer for another 15 minutes, or until the potatoes are tender.
  • Add the chopped kale and cook for 5 minutes, until wilted.
  • Remove the bay leaves and serve your delicious homemade chicken soup hot, garnished with chopped fresh parsley.
