Add the following ingredients to a large stockpot (Chicken pieces, Vegetables (such as onions, garlic cloves, carrots, celery, and parsley), Herbs, Salt and pepper)
Fresh chicken, Onions, garlic cloves, carrots, celery, parsley, kosher salt, whole black peppercorns
Cover everything with water and bring it to a boil.
As the broth simmers, use a spoon to skim off any foam that forms on the surface. This will help clarify the broth.
Reduce the heat, partially cover the pot, and let the broth simmer for about 3 hours. This long simmering time allows the flavors to meld together and creates a rich and aromatic broth.
Once the broth is done simmering, remove the solids (chicken, vegetables, and herbs) with a slotted spoon.
Strain the broth using a colander to remove any remaining solids or impurities.
At this point, you can choose to remove the fat that rises to the surface or leave it for added flavor.
