- 400 g pasta
- 3 large eggs
- 1/2 cup heavy cream
- 1 cup grated cheese
- 150 g pancetta or bacon
- 2 cloves minced garlic
- Additional grated cheese and freshly ground black pepper to taste
Cook your pasta according to package instructions until al dente. Drain and set aside.
In a separate bowl, whisk together the eggs, cream, and grated cheese until well combined.
In a large skillet, cook your choice of pancetta or bacon until crispy. Remove with a slotted spoon and set aside.
Add minced garlic to the skillet and sauté until fragrant.
Return the cooked pasta to the skillet with the garlic and toss until well coated.
Pour the egg mixture over the pasta and quickly toss to evenly coat the noodles. The residual heat will cook the eggs and create a creamy sauce.
Stir in the crispy pancetta or bacon.
Serve immediately, garnished with additional grated cheese and freshly ground black pepper.
