Ingredients
  

  • 250 g Plain Flour
  • 2 tsp Baking Powder
  • ½ tsp Bicarbonate of Soda
  • 2 tbsp Caster Sugar
  • ½ tsp Salt
  • 475 ml Buttermilk
  • 2 Large Eggs
  • 60 g Unsalted Butter melted
  • 1 tsp Vanilla Extract

Instructions
 

  • Combine flour, baking powder, bicarbonate of soda, sugar, and salt in a large bowl.
    250 g Plain Flour, 2 tsp Baking Powder, ½ tsp Bicarbonate of Soda, 2 tbsp Caster Sugar, ½ tsp Salt
  • In a separate bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract.
    475 ml Buttermilk, 2 Large Eggs, 60 g Unsalted Butter, 1 tsp Vanilla Extract
  • Pour the wet mixture into the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are perfectly fine.
  • Heat a non-stick frying pan over medium heat and lightly grease it with butter or oil.
  • Pour a ladleful of batter onto the pan. Cook until bubbles form on the surface and edges look set, then flip and cook for another minute or two until golden brown.
