Ingredients
  

  • Freshly made white breadcrumbs
  • Onion
  • Cloves or freshly grated nutmeg
  • Bay leaf
  • Black peppercorns
  • Breakfast milk
  • Butter
  • Double cream
  • Salt
  • Freshly milled black pepper

Instructions
 

  • Cut the onion in half and stick cloves in it, or alternatively, use freshly grated nutmeg according to personal preference.

  • In a saucepan, place the onion along with a bay leaf, peppercorns, and milk.

  • Bring the mixture to boiling point and let it infuse for two hours or more, allowing the flavors to develop.
  • Remove the onion, bay leaf, and peppercorns from the infused milk.
  • Stir breadcrumbs into the milk and add butter.

  • Heat the mixture gently until the sauce thickens to the desired consistency.
  • Before serving, remove the onion and spices, reheat the sauce gently, and add the remaining butter and cream.

  • Season the sauce to taste and pour it into a warm serving jug.
