- 250 g plain flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 300 ml milk
- 50 g unsalted butter melted
- 1 tsp vanilla extract
In a large mixing bowl, whisk together the flour, sugar, and baking powder.
In a separate bowl, melt the butter and let it cool slightly. Add the eggs and milk, and whisk until well combined.
Pour the wet mixture into the dry ingredients and gently fold until just combined. Be careful not to overmix, as this can lead to denser pancakes.
Heat a non-stick frying pan or griddle over medium heat. Once hot, pour a ladleful of batter onto the pan for each pancake.
