Ingredients
  

  • 250 g plain flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 300 ml milk
  • 50 g unsalted butter melted
  • 1 tsp vanilla extract

Instructions
 

  • In a large mixing bowl, whisk together the flour, sugar, and baking powder.
  • In a separate bowl, melt the butter and let it cool slightly. Add the eggs and milk, and whisk until well combined.
  • Pour the wet mixture into the dry ingredients and gently fold until just combined. Be careful not to overmix, as this can lead to denser pancakes.
  • Heat a non-stick frying pan or griddle over medium heat. Once hot, pour a ladleful of batter onto the pan for each pancake.
  • Cook until bubbles form on the surface of the pancakes, then flip and cook for another minute or until golden brown.
